Preparation

Marinating the Chicken

1. Prepare the Marinade

In a bowl, whisk together olive oil, lemon juice, minced garlic, soy sauce, oregano, salt, and black pepper.

2. Marinate the Chicken

Place the chicken breasts in a large zip-top bag or dish, pour the marinade over, seal, and refrigerate for at least 1 hour or overnight for best results.

Cooking the Chicken

3. Preheat the Grill

Preheat your grill to medium-high heat.

4. Grill the Chicken

Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes on each side or until fully cooked and has nice grill marks.

Preparing the Sautéed Spinach

5. Sauté the Spinach

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach, season with salt and pepper, and cook until wilted.

Making Garlic Mashed Potatoes

6. Boil the Potatoes

In a large pot, add potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

7. Mash the Potatoes

Drain the potatoes, then return to the pot. Add butter, milk, minced garlic, salt, and pepper. Mash until creamy and well combined.
