Preparation Steps

  1. 1

    Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and dry them. Prick each potato several times with a fork and place them on a baking sheet. Bake in the oven for about 45-60 minutes, or until they are tender when pierced with a fork.

  2. 2

    Cook the Broccoli

While the potatoes are baking, bring a pot of water to a boil. Add the broccoli florets and cook for about 3-4 minutes until they are bright green and tender-crisp. Drain and set aside.

  3. 3

    Assemble the Potatoes

Once the potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato open lengthwise and fluff the insides with a fork. Add a tablespoon of butter to each potato, followed by a generous dollop of sour cream. Season with salt and black pepper to taste.

  4. 4

    Add Broccoli and Cheese

Top each potato with the cooked broccoli florets and sprinkle with shredded cheddar cheese. Return the loaded potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

  5. 5

    Serve

Remove the potatoes from the oven and let cool for a minute. Serve warm, garnished with additional sour cream or cheese if desired.
