    Mash the Grains

    In a large mash tun, heat 20 liters of water to 70°C. Add the pale malt, caramel malt, and pilsner malt. Stir well and maintain the temperature for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water (75°C) to collect the wort. Aim for a total of 25 liters of wort.

    Boil the Wort

    Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add the Citra hops in the last 15 minutes and the Simcoe hops in the last 5 minutes.

    Cooling the Wort

    After the boil, cool the wort quickly using a wort chiller or by placing the pot in an ice bath until it reaches around 20°C.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Ferment at 20-22°C for about 1-2 weeks.

    Bottling

    Once fermentation is complete, transfer the beer into sanitized bottles. Add priming sugar if carbonation is desired, then cap the bottles.

    Conditioning

    Allow the bottles to condition at room temperature for 1-2 weeks before refrigerating.
