Falafel Preparation Instructions

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Soak overnight (or for at least 8 hours).

    Make Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse meal forms, scraping down the sides as needed.

    Shape the Falafel

    Transfer the mixture to a bowl and refrigerate for 30 minutes. Once chilled, form the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    Heat olive oil in a deep frying pan over medium heat. Fry the falafel in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
