Tart Crust
Method
Tart Assembly
- 1
Prepare the Tart Crust
In a large bowl, mix together the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Pre-bake the Crust
Preheat the oven to 350°F (175°C). Line the crust with parchment paper and fill with pie weights. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes until golden. Let cool.

Make the Walnut Brittle
In a saucepan over medium heat, combine 1 cup of granulated sugar and 1/4 cup of water. Stir until the sugar dissolves, then stop stirring and allow it to boil until it turns a deep amber color. Remove from heat and quickly stir in 1 cup of chopped walnuts. Pour onto a parchment-lined baking sheet and let cool completely before breaking into pieces.
