Prepare the Grits

In a medium saucepan, bring the chicken broth to a boil. Stir in the yellow grits, reduce the heat, cover, and simmer for about 20-25 minutes, stirring occasionally until the grits are creamy and tender.

Cook the Sausage and Vegetables

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced sausage and cook until browned, about 5 minutes. Add the diced onion, bell pepper, and minced garlic; cook until softened, about 5-7 minutes.

Add the Shrimp

Stir in the shrimp and Cajun seasoning. Cook until the shrimp are pink and cooked through, about 3-5 minutes. Season with salt and pepper to taste.

Finish the Grits

Once the grits are done, stir in the remaining 2 tablespoons of butter until melted and smooth. Adjust seasoning if needed.

Spoon the creamy grits onto plates and top with the shrimp and sausage mixture. Garnish with sliced green onions and serve immediately.
