Preparation Steps
1. Prepare the Turkey
Preheat the oven to 325°F (165°C). Remove the turkey giblets and neck. Rinse the turkey inside and out and pat dry with paper towels. Rub salt, pepper, thyme, and sage all over the turkey.
2. Stuff the Turkey
Prepare the herbed stuffing mix according to package instructions. Stuff the turkey cavity with the stuffing, then tie the legs together with kitchen twine. Place the turkey on a roasting pan.
3. Roast the Turkey
Roast the turkey in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste the turkey occasionally with its juices.
4. Prepare Sweet Potatoes
While the turkey is roasting, peel and chop the sweet potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with 4 tablespoons of butter, salt, and pepper to taste.
5. Make Gravy
Once the turkey is done, remove it from the roasting pan and set aside. Pour the drippings into a saucepan and skim off excess fat. Add flour to the drippings and whisk to form a roux. Gradually add chicken broth, whisking continuously until thickened. Season with salt and pepper.
6. Serve
Carve the turkey and serve with herbed stuffing, mashed sweet potatoes, gravy, and cranberry sauce on the side.
