Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form the fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and dry the soaked fries thoroughly. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While they are still hot, toss them with salt and black pepper.

Add Truffle Oil and Cheese
Drizzle the truffle oil over the hot fries and toss to coat. Sprinkle the grated Parmesan cheese and chopped parsley on top before serving.
