    Prepare the Dough

    In a mixing bowl, combine flour, salt, and water. Mix until a smooth dough forms. Knead for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Topping

    While the dough is resting, cook the diced bacon in a skillet over medium heat until crispy. Remove from heat and set aside. In a separate bowl, mix heavy cream with black pepper and a pinch of nutmeg.

    Roll Out the Dough

    After resting, roll out the dough on a floured surface until very thin, about 1/8 inch thick. Transfer to a baking sheet or pizza stone.

    Assemble the Tarte Flambee

    Spread the cream mixture evenly over the rolled-out dough. Evenly distribute the sliced onions and cooked bacon on top.

    Bake

    Preheat the oven to 475°F (245°C). Bake the tarte for 12-15 minutes or until the edges are golden and crispy.

    Serve

    Remove from the oven, let cool for a couple of minutes, slice, and serve warm.
