    Butter Poaching the Lobster

    In a saucepan, melt the unsalted butter over low heat. Add the lobster tails, ensuring they are fully submerged in butter. Cook gently for about 8-10 minutes, or until the lobster is opaque and cooked through. Remove the lobster and set aside.

    Preparing the Ahi Tuna

    Season the ahi tuna steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the tuna for about 1-2 minutes on each side, allowing it to remain rare in the center. Remove from heat and let it rest for a few minutes before slicing thinly.

    Making the Spicy Mayo

    In a small bowl, combine mayonnaise and Sriracha sauce. Adjust the spiciness to your taste by adding more Sriracha if desired.

    Preparing Carrot Ginger Purée

    In a small saucepan, combine the grated carrots, grated ginger, and a pinch of salt with enough water to cover. Simmer until the carrots are tender, about 10-15 minutes. Drain and blend until smooth. Adjust seasoning with salt and pepper.

    Plating the Dish

    On a plate, lay down the nori sheet. Place the sliced ahi tuna on top, followed by the butter poached lobster pieces. Drizzle the spicy mayo over the top, and add a dollop of carrot ginger purée beside it. Garnish with tobiko.
