    Roasting the Pork Loin

    Preheat the oven to 180°C (350°F). Season the pork loin with olive oil, salt, and black pepper. Place it on a roasting pan and roast for 25-30 minutes or until the internal temperature reaches 70°C (160°F). Let it rest before slicing.

    Preparing the Fried Pork Ears

    Clean the pork ears and boil them in salted water for about 1 hour until tender. Drain and let cool. Cut into strips and pan-fry in olive oil until crispy. Season with salt and pepper.

    Making the White Bean Purée

    In a saucepan, sauté garlic and onion in olive oil until softened. Add the white beans and vegetable broth, then simmer for 15 minutes. Blend until smooth and season with salt and pepper.

    Sautéing the Haricots Verts

    Blanch the haricots verts in salted boiling water for 2-3 minutes, then drain. Sauté in butter for 2 minutes until tender but still crisp.

    Preparing Sauce Robert

    In a saucepan, combine white wine, Dijon mustard, and honey. Simmer until reduced by half, then stir in a bit of butter for richness. Season with salt and pepper.

    Slice the roasted pork loin and arrange it on a plate with the fried pork ears, white bean purée, and sautéed haricots verts. Drizzle with Sauce Robert and serve.
