Marinate the Chicken
In a large bowl, combine the buttermilk, salt, and cayenne pepper. Add the chicken pieces and ensure they are well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating
In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat the Chicken
Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour mixture until fully coated. Shake off any excess flour.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 12-15 minutes per side, or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Use tongs to remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot.
