    Prepare the Seafood

    Rinse the shrimp, calamari, and fish fillets under cold water and pat dry with paper towels.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. In a separate bowl, whisk together the eggs and cold water, then combine with the dry ingredients to form a batter.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Seafood

    Dip each piece of seafood into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes for shrimp and calamari, and 4-5 minutes for fish fillets.

    Drain and Serve

    Remove the fried seafood from the oil using a slotted spoon and place on paper towels to drain excess oil. Serve hot with lemon wedges and your choice of dipping sauce.
