Chocolate Pâté

Method

Preparation of Chocolate Pâté

  1. 1

    Melt the Chocolate

In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

  2. 2

    Mix Eggs and Sugar

In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and a pinch of salt until well combined and slightly frothy.

  3. 3

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously to prevent the eggs from scrambling. Mix until fully incorporated.

  4. 4

    Prepare the Baking Dish

Preheat the oven to 160°C (320°F). Grease a loaf pan or a small baking dish and line it with parchment paper.

  5. 5

    Bake the Pâté

Pour the combined mixture into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center still has a slight jiggle.

  6. 6

    Cool and Chill

Remove from the oven and let it cool at room temperature. Once cool, refrigerate for at least 2 hours before serving.
