Preheat Oven
Preheat your oven to 425°F (220°C).

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add the diced onion and carrots, and sauté until the onion is translucent, about 5 minutes.

Make the Sauce
Stir in the flour and cook for 1-2 minutes. Gradually whisk in the chicken broth and milk, and bring the mixture to a simmer. Cook until the sauce has thickened, about 5 minutes.

Add Chicken and Peas
Remove the skillet from heat and stir in the shredded chicken, peas, thyme, salt, and pepper.

Assemble the Pie
Place one pie crust in a pie dish. Pour the chicken and vegetable filling into the crust. Cover with the second pie crust, seal the edges, and cut slits in the top for steam to escape.

Bake
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Let cool for a few minutes before serving.
