    Prepare the Prime Rib

    Season the prime rib with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the prime rib on all sides until browned. Transfer to a preheated oven at 375°F (190°C) and roast for about 20-25 minutes for medium rare. Remove and let it rest for 10 minutes before slicing.

    Caramelize Shallots

    In the same skillet, add the remaining tablespoon of olive oil and add the sliced shallots. Cook on medium heat, stirring occasionally, until the shallots are golden brown and caramelized, about 10-15 minutes.

    Sauté Spinach

    Add the fresh spinach to the skillet with the caramelized shallots. Cook until the spinach is wilted, about 3-4 minutes. Season with salt and black pepper.

    Assemble the Pie

    In a pie dish, layer the sautéed spinach and shallots, followed by the sliced prime rib. Top with asiago cheese and tear the burrata into pieces, distributing it evenly over the top. Garnish with fresh basil.

    Bake

    Place the assembled pie in the oven at 375°F (190°C) for 10-15 minutes, until the cheese is melted and bubbly.

    Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy!
