Preparation Steps

    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly and season it generously with salt and black pepper.

    Sear the Pork Belly

    In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the pork belly, skin-side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes.

    Add Aromatics

    Remove the pork belly and set aside. In the same pot, add chopped onion, minced garlic, carrots, and celery. Sauté until softened, about 5-6 minutes.

    Deglaze with Whiskey

    Pour in the Jack Daniels whiskey, scraping up any browned bits from the bottom. Let it reduce by half.

    Braise the Pork Belly

    Return the pork belly to the pot and add beef stock. Bring to a simmer, cover, and transfer to the oven. Braise for 2.5 to 3 hours until tender.

    Prepare the Rainbow Chard

    In a separate pan, melt butter over medium heat. Add chopped rainbow chard and sauté until wilted, about 3-4 minutes. Finish with lemon juice and season with salt.

    Serve

    Once the pork is tender, remove from the oven and let it rest for 10 minutes. Slice the pork belly and serve on a bed of wilted rainbow chard, topped with tomato jam and drizzled with Jack Daniels demi-glace.
