    Prepare the Pork Chops

    Pat the bone-in pork chops dry with paper towels. This will help achieve a nice sear on the meat.

    Season the Pork Chops

    In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and fresh thyme. Rub this mixture all over the pork chops, ensuring they are well coated.

    Preheat the Grill or Pan

    If grilling, preheat your grill to medium-high heat. If using a skillet, heat a large cast-iron skillet over medium-high heat and add a little olive oil.

    Cook the Pork Chops

    Place the seasoned pork chops on the grill or skillet. Cook for about 5-7 minutes on one side until they are nicely browned. Flip the chops and cook for an additional 5-7 minutes on the other side, or until the internal temperature reaches 145°F (63°C).

    Rest and Serve

    Remove the pork chops from the heat and let them rest for 5 minutes. Drizzle with lemon juice before serving.
