    Prepare Ingredients

    Gather and prepare all ingredients. Cut the beef into 1-inch cubes, slice the carrots, dice the onion, and quarter the mushrooms.

    Cook Bacon

    In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Brown the Beef

    In the same pot, add olive oil if necessary, then add the beef cubes in batches, browning on all sides. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion, carrots, and garlic. Sauté for about 5 minutes until softened.

    Combine Ingredients

    Stir in the flour, tomato paste, thyme, bay leaf, and season with salt and pepper. Cook for another minute.

    Add Wine and Broth

    Pour in the red wine and beef broth, scraping any browned bits from the bottom. Bring to a simmer.

    Simmer Stew

    Return the beef and bacon to the pot. Add the mushrooms. Cover and simmer on low heat for about 2 to 2.5 hours until the beef is tender.

    Remove the bay leaf before serving. Enjoy your Beef Bourguignon with crusty bread or over mashed potatoes.
