    Prepare Ingredients

    Chop the onion, bell pepper, and celery into small pieces. Mince the garlic cloves. Slice the andouille sausage and chicken breast into bite-sized pieces.

    Sauté the Meats

    In a large pot, heat the olive oil over medium heat. Add the sausage and chicken and cook until browned, about 5-7 minutes. Remove and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.

    Add the Rice and Liquids

    Stir in the rice, canned tomatoes (with juice), chicken broth, cajun seasoning, bay leaves, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce heat to low, cover the pot, and simmer for 20 minutes.

    Add Shrimp and Finished Meats

    After 20 minutes, stir in the shrimp and the previously cooked sausage and chicken. Cover and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Garnish and Serve

    Remove bay leaves, garnish with chopped green onions, and serve hot.
