1. Soak Chickpeas
Soak the dried chickpeas in water for 8 hours or overnight. Drain and rinse.
2. Blend Ingredients
In a food processor, combine the soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms.
3. Form Falafel Balls
Shape the mixture into small balls or patties, about 1-2 inches in diameter.
4. Heat Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
5. Fry Falafel
Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.
