Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in short bursts until smooth. Allow it to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip, as it should remain smooth and creamy. Set aside.

Prepare the Egg Mixture
In another bowl, whisk the eggs, granulated sugar, and a pinch of salt until the mixture becomes pale and slightly thickened.

Combine Ingredients
Gently fold the melted chocolate into the egg mixture until fully combined. Then, carefully fold in the whipped cream in two additions until no streaks remain. Add the vanilla extract and mix gently.

Chill the Mousse
Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.

Serve
Once chilled, serve the chocolate mousse as is or with whipped cream and chocolate shavings on top.
