Fondant Preparation

    Melt Chocolate and Butter

    Preheat your oven to 200°C (400°F). In a heatproof bowl, combine dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.

    Whisk Eggs and Sugar

    In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and fluffy.

    Combine Mixtures

    Pour the melted chocolate and butter mixture into the egg mixture. Add vanilla extract and a pinch of salt. Stir until well combined.

    Add Flour

    Sift in the all-purpose flour and gently fold the mixture until just combined. Be careful not to overmix.

    Prepare Ramekins

    Grease four ramekins with butter and dust with cocoa powder or flour. Pour the batter evenly into the prepared ramekins.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for about 10-12 minutes, until the edges are set but the center is still soft.

    Serve

    Remove from the oven and let cool for a minute. Invert each ramekin onto a plate and serve immediately with a scoop of vanilla ice cream.
