1. Prepare the Rice
Rinse the white rice under cold water until the water runs clear. In a pot, add the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
2. Prepare the Chicken
While the rice is cooking, cut the chicken breast into bite-sized pieces. In a bowl, mix the chicken with olive oil, garlic powder, paprika, salt, and pepper. Make sure the chicken is well coated.
3. Grill the Chicken and Vegetables
Preheat the grill or a grill pan over medium heat. Add the chicken pieces and grill for about 5-7 minutes on each side, or until cooked through. Slice the bell peppers and zucchini, and add them to the grill for the last 5 minutes of cooking, until they are tender.
