1. Prepare the Rice
Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is fluffy and water is absorbed.
2. Marinate the Chicken
In a bowl, mix olive oil, salt, black pepper, garlic powder, paprika, and lemon juice. Add the chicken breasts and coat well. Let marinate for at least 15 minutes.
3. Prepare the Vegetables
Chop the bell pepper and zucchini into bite-sized pieces.
4. Grill the Chicken and Vegetables
Preheat the grill or grill pan over medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. At the same time, grill the bell pepper and zucchini pieces for about 3-4 minutes until tender.
5. Serve
Fluff the cooked rice with a fork. Serve the grilled chicken and vegetables over the rice. Enjoy!
