Prepare the Filling
In a large mixing bowl, combine ground pork, shredded cabbage, grated carrots, chopped green onions, minced garlic, soy sauce, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Eggrolls
Take an eggroll wrapper and place about 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form an eggroll. Seal the edges with a little water. Repeat with remaining wrappers and filling.

Fry the Eggrolls
In a deep frying pan or pot, heat vegetable oil over medium heat. Once the oil is hot, carefully add the eggrolls in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve hot with sweet and sour dipping sauce on the side.
