Prepare the Filling
In a large skillet over medium heat, cook the ground pork until browned. Drain excess fat. Add shredded cabbage, carrots, green onions, soy sauce, sesame oil, garlic, and ginger. Sauté for about 5-7 minutes until vegetables are tender. Remove from heat and let the filling cool.

Roll the Eggrolls
Place an eggroll wrapper on a clean surface with a corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water. Repeat with remaining wrappers and filling.

Fry the Eggrolls
In a deep skillet or fryer, heat oil over medium-high heat until hot. Carefully add the eggrolls in batches and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy eggrolls hot with sweet and sour dipping sauce on the side.
