Prepare the Filling
In a large skillet over medium heat, add the ground pork and cook until browned. Add the minced garlic, shredded cabbage, julienned carrots, and chopped green onion. Stir well and cook for another 3-4 minutes until vegetables are tender. Add soy sauce and mix well. Remove from heat and let cool.

Assemble the Eggrolls
Lay a wonton wrapper on a clean surface with one corner pointing towards you. Place a spoonful of the filling near the corner. Fold the corner over the filling, then fold in the sides and roll tightly. Seal the end with a dab of water. Repeat with remaining wrappers and filling.

Fry the Eggrolls
In a deep pan, heat vegetable oil over medium-high heat. Once hot, carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve hot with sweet and sour dipping sauce on the side.
