Prepare the Filling
In a large skillet over medium heat, cook the ground pork until browned. Add in the shredded carrots, chopped cabbage, green onions, and minced garlic. Stir in the soy sauce and cook until the vegetables are tender, about 5 minutes. Remove from heat and let cool.

Assemble the Eggrolls
Lay an eggroll wrapper on a clean surface, with one corner pointing towards you. Place 2 tablespoons of the filling near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water to seal the edge. Repeat for all wrappers.

Fry the Eggrolls
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add 3-4 eggrolls at a time and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve
Serve the crispy eggrolls warm with sweet and sour dipping sauce on the side.
