Prepare the Filling
In a large bowl, combine the ground pork, shredded cabbage, grated carrots, chopped green onions, soy sauce, and minced garlic. Mix well until all ingredients are evenly incorporated.

Assemble the Eggrolls
Place an egg roll wrapper on a clean surface with a corner pointing towards you. Spoon about 2-3 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to seal the top corner. Repeat with the remaining wrappers and filling.

Fry the Eggrolls
In a deep frying pan or pot, heat vegetable oil over medium-high heat. Once hot, carefully add the eggrolls, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy eggrolls hot with sweet & sour dipping sauce on the side.
