Prepare the Filling
In a large bowl, combine the ground chicken, chopped cabbage, grated carrot, green onions, minced garlic, minced ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

Assemble the Potstickers
Place a tablespoon of the filling in the center of each dumpling wrapper. Moisten the edges with water, fold the wrapper over the filling, and press to seal. Make pleats along the edges for a decorative touch.

Cook the Potstickers
Heat a non-stick skillet over medium heat and add a little oil. Arrange the potstickers in the skillet, flat side down. Cook for about 2-3 minutes until the bottoms are golden brown.

Steam the Potstickers
Add a splash of water (about 1/4 cup) to the skillet, cover with a lid, and let them steam for about 5-7 minutes, or until the water has evaporated and the potstickers are cooked through.

Serve
Remove the potstickers from the skillet and serve hot with sweet & sour dipping sauce.
