Prepare the Filling
In a large bowl, combine the ground chicken, chopped cabbage, grated carrot, green onion, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

Fill and Fold Wrappers
Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper in half, and press to seal. Repeat until all filling is used.

Cook the Potstickers
Heat the vegetable oil in a large skillet over medium heat. Arrange the potstickers in a single layer and cook until the bottoms are golden brown, about 2-3 minutes. Add a few tablespoons of water to the skillet and cover immediately to steam for about 5 minutes.

Serve
Remove the lid and cook for an additional 1-2 minutes to crisp up the bottoms. Serve hot with sweet & sour dipping sauce on the side.
