    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a pot, bring water to a boil, add the diced potatoes, and cook until tender, about 10-15 minutes. Drain and set aside.

    Caramelize the Onions

    In a large skillet, heat the olive oil over medium heat. Slice the onion and add it to the skillet. Cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes.

    Roast the Poblano Peppers

    While the onions are caramelizing, roast the poblano peppers over an open flame or under a broiler until charred. Place them in a plastic bag for about 10 minutes to steam. Once cooled, peel off the skin, remove the seeds, and slice into strips.

    Combine the Filling

    In the skillet with the caramelized onions, add the cooked potatoes and roasted poblano peppers. Season with salt and black pepper. Stir well to combine and cook for an additional 5 minutes until heated through.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet or microwave. Fill each tortilla with the rajas and potato mixture. Serve with your choice of toppings, such as avocado, cilantro, or lime.
