Prepare Churro Dough

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil. Stir in flour until the mixture forms a ball. Remove from heat and let it cool slightly.

Add Eggs

Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and cinnamon.

Heat Oil

In a deep frying pan, heat vegetable oil to 375°F (190°C).

Fry Churros

Transfer churro dough to a piping bag fitted with a star tip. Pipe strips of dough into hot oil and fry until golden brown. Drain on paper towels.

Fill Churros

Let churros cool slightly, then fill with dulce de leche using a piping bag.

Make Dulce de Leche

To make dulce de leche, simmer a can of sweetened condensed milk in a pot of water for about 2 hours until thick and caramelized.

Prepare Hot Chocolate

In a saucepan, heat milk with a cinnamon stick. Add the Mexican chocolate tablet and sugar, stirring until melted and combined.

Mix Ingredients

In a bowl, whisk together heavy cream, whole milk, sugar, cocoa powder, vanilla extract, and egg yolks until well combined.

Chill and Churn

Chill the mixture in the refrigerator for at least 2 hours, then churn in an ice cream maker according to manufacturer's instructions.
