Prepare the Tortilla Dough

In a mixing bowl, combine all-purpose flour and salt. Mix well. Add lard (or vegetable oil) and water, and knead until the dough is smooth. Divide the dough into small balls and let them rest covered for 30 minutes.

Cook the Tortillas

Heat a skillet over medium heat. Roll out each dough ball into a thin circle and cook in the skillet for about 1-2 minutes on each side until lightly browned. Keep warm.

Carnitas

Cook the Pork

In a slow cooker, combine pork shoulder, orange juice, garlic, cumin, oregano, salt, black pepper, and bay leaves. Cook on low for 8 hours or until the pork is tender.

Shred the Pork

Remove the pork from the slow cooker, shred it with two forks, and return it to the pot to absorb the juices.

Pico de Gallo

Make the Pico de Gallo

Chop the tomatoes, onion, and cilantro. Combine in a bowl, add lime juice and salt, and mix well.

In a saucepan, heat the canned refried beans with olive oil and garlic powder over medium heat until warm.
