Method
Prepare Masa Cake
Make the Masa
In a large mixing bowl, combine masa harina and salt. Gradually add warm water, mixing until a soft dough forms. Divide the dough into large balls and flatten each ball into a shoe-shaped cake.
Cook the Masa Cakes
Heat a skillet over medium heat and lightly grease. Cook each masa cake for about 3-5 minutes on each side until golden and slightly crispy. Keep warm.
Prepare Wild Mushrooms

Sauté Rajas
In the same skillet, add olive oil, sliced onion, and roasted poblano peppers. Cook until the onion is translucent and tender. Set aside.
Prepare Refried Beans
Heat Refried Beans
In a small pot, heat the canned refried beans over medium heat. Stir in cumin and olive oil, and cook until heated through.
Prepare Pipian Verde
Blend Pipian Verde
In a blender, combine pumpkin seeds, cilantro, green chili, lime juice, and salt. Blend until smooth and adjust seasoning as needed.
Assemble Huarache
Assemble the Dish
On each masa cake, layer refried beans, sautéed mushrooms, rajas, and drizzle with pipian verde. Top with crema and crumbled queso fresco.
