Method

Prepare Masa Cake

Make the Masa Dough

In a large bowl, combine masa harina and salt. Gradually add warm water, mixing until a soft dough forms. Divide the dough into equal balls.

Shape and Cook

Flatten each ball into a shoe-shaped masa cake. Grill on a preheated grill or skillet for about 5-7 minutes on each side until cooked through. Set aside.

Cook Steak

Marinate and Grill

Rub flank steak with olive oil, garlic powder, cumin, salt, and black pepper. Grill over medium-high heat for about 5-6 minutes per side, or until desired doneness. Let rest before slicing.

Prepare Rajas

Cook Peppers and Onions

In a skillet, heat olive oil over medium heat. Add sliced poblano peppers and onion. Sauté until they are tender and slightly charred, about 8-10 minutes. Season with salt.

Make Refried Beans

Cook Beans

In a saucepan, heat olive oil over medium heat. Add minced garlic and cook for 1 minute. Add pinto beans and mash with a fork. Cook for about 5-7 minutes, seasoning with salt to taste.

Prepare Tomatillo Salsa

Blend Salsa

In a blender, combine husked tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning if necessary.

Assemble Huarache

Layer Ingredients

On each masa cake, spread a layer of refried beans, top with grilled steak slices, rajas, and drizzle with tomatillo salsa. Finish with a dollop of crema and a sprinkle of queso fresco.
