    Prepare the Vegetables

    Wash and chop the baby zucchini, cherry tomatoes, and broccolini. Slice the onion thinly.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes. Add the baby zucchini and broccolini, and cook for another 5 minutes. Finally, add the cherry tomatoes and cook for an additional 2-3 minutes. Season with salt and black pepper.

    Cook the Fish

    Push the sautéed vegetables to one side of the skillet. Place the fish fillets in the skillet and pour the mole amarillo sauce over them. Cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Once the fish is cooked, gently mix with the vegetables and mole sauce. Serve hot, garnished with fresh herbs if desired.
