    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Peel and slice the Russet potatoes into thin rounds (about 1/8 inch thick).

    Make the Cream Mixture

    In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream, salt, and black pepper. Bring to a simmer.

    Layer the Potatoes

    In a greased baking dish, arrange half of the sliced potatoes in an even layer. Pour half of the cream mixture over the potatoes, followed by half of the queso cotija. Repeat the layers with the remaining potatoes, cream mixture, and queso cotija.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 20 minutes or until the potatoes are tender and the top is golden brown.

    Serve

    Once baked, remove from the oven and let it cool slightly. Drizzle salsa macha over the top and serve with pipián verde on the side. Garnish with chopped fresh parsley.
