Tuna Tartare

Preparation

    Prepare the Tuna

    Dice the raw tuna into small, uniform cubes, approximately 1/4 inch in size. Place in a mixing bowl.

    Dice the Asian Pear

    Core and dice the Asian pear into small pieces, similar in size to the tuna, and add to the mixing bowl.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into the bowl. Dice the avocado into small cubes and gently fold into the mixture.

    Add Seasoning

    Pour the ponzu sauce and sesame oil over the mixture in the bowl. Gently combine all ingredients to ensure even coating without mashing.

    Prepare the Crispy Shallots

    If using store-bought crispy shallots, measure out 1 cup. If making from scratch, thinly slice shallots and fry in oil until golden and crispy. Drain on paper towels.

Assembly

    Plate the Tartare

    Using a ring mold or a small bowl, carefully pack the tuna tartare mixture into the mold on a serving plate. Remove the mold gently.

    Garnish

    Top the tartare with a generous sprinkle of crispy shallots for added texture and flavor.

    Serve with Idaho Chips

    Arrange Idaho chips around the tartare on the plate for a crunchy accompaniment.
