Preparation of Fruit Purees

1. Peach Puree

Cut the fresh peaches in half, remove the pits, and chop them into smaller pieces. In a blender, combine the chopped peaches with 1 tablespoon of sugar and 1/4 cup of water. Blend until smooth, then strain through a fine-mesh sieve into a bowl to remove any solids. Set aside.

2. Strawberry Puree

Remove the stems from the fresh strawberries and slice them in half. In a blender, combine the strawberries with 1 tablespoon of sugar and 1/4 cup of water. Blend until smooth, then strain through a fine-mesh sieve into a bowl to remove any solids. Set aside.

3. Orange Puree

Peel and segment the fresh oranges, removing any seeds. In a blender, combine the orange segments with 1 tablespoon of sugar and 1/4 cup of water. Blend until smooth, then strain through a fine-mesh sieve into a bowl to remove any solids. Set aside.

4. Raspberry Puree

In a blender, combine the fresh raspberries with 1 tablespoon of sugar and 1/4 cup of water. Blend until smooth. Strain through a fine-mesh sieve into a bowl to remove any seeds. Set aside.

5. Mango Puree

Peel and chop the fresh mango into smaller pieces. In a blender, combine the mango pieces with 1 tablespoon of sugar and 1/4 cup of water. Blend until smooth, then strain through a fine-mesh sieve into a bowl to remove any solids. Set aside.

Assembly

6. Serve the Mimosas and Bellinis

In a chilled glass, pour 3 ounces of sparkling wine. Add 1 ounce of the desired fruit puree (peach for Bellini, orange for Mimosa) and gently stir to combine. Repeat for each glass as needed. You can serve the purees in glass carafes for guests to mix their own drinks if desired.
