    Peel and devein the shrimp, leaving the tails on. Rinse under cold water and pat dry with paper towels. Season with salt and black pepper evenly on both sides.

Make Tempura Batter

    Prepare the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, and baking powder. In a separate bowl, beat the egg and mix it with the ice-cold water. Gradually combine the wet mixture with the dry ingredients, stirring lightly until just combined. Do not overmix; slightly lumpy batter is ideal.

    In a deep saucepan or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
