Method

Preparing the Short Rib Filling

    Season and Sear the Short Ribs

    Rub the short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Once hot, add the short ribs and sear each side for about 3-4 minutes until browned. Remove and set aside.

    Cook Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Add Remaining Ingredients

    Return the short ribs to the pot. Pour in the beef broth, add cumin and chipotle pepper. Bring to a boil, then reduce heat to low and cover. Simmer for about 2.5 to 3 hours, or until the ribs are tender.

    Shred the Meat

    Remove the short ribs from the pot and shred the meat using two forks. Return the shredded meat to the pot and stir to combine.

Caramelizing the Onions

    Heat Oil and Add Onions

    In a separate pan, heat olive oil over medium heat. Add thinly sliced onions and sprinkle with salt.

    Caramelize the Onions

    Cook the onions, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized.

Making the Tomato Salsa

    Chop Ingredients

    Dice the tomatoes, red onion, and jalapeño. Finely chop the cilantro.

    Mix the Salsa

    In a bowl, combine the diced tomatoes, red onion, jalapeño, cilantro, and the juice of one lime. Season with salt to taste and mix well.

Assembling the Tacos

    Prepare Taco Shells

    Warm the taco shells in the oven or microwave as per package instructions.

    Fill Tacos

    Fill each taco shell with a generous amount of shredded short rib filling, top with caramelized onions, and add fresh salsa.

    Garnish and Serve

    Garnish with freshly chopped parsley and serve immediately.
