    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest at room temperature for at least 30 minutes.

Seasonal Filling Preparation

    Cook the Butternut Squash

    In a pot, bring water to a boil and add the cubed butternut squash. Cook for about 10-15 minutes until tender. Drain and let cool slightly.

    Make the Filling

    In a mixing bowl, mash the cooked butternut squash. Add ricotta cheese, fresh sage leaves (chopped), grated Parmesan cheese, nutmeg, and season with salt and black pepper. Mix until well combined.

Ravioli Assembly

    Divide the rested dough into four portions. Roll out each portion using a pasta machine or rolling pin until thin. Dust with flour to prevent sticking.

    Place small mounds of the filling (about 1 tsp each) on one half of the rolled-out dough. Fold the other half over the filling and press down to seal, ensuring no air is trapped inside. Cut into individual ravioli shapes using a pasta cutter or knife.

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon and drain.

Sauce Preparation

    In a skillet, melt the butter over medium heat. Add the fresh sage leaves and cook until the butter is lightly browned, about 2-3 minutes. Remove from heat.
