Preparation

    Prepare the Lobster

    In a large pot of boiling salted water, add the whole Maine lobster. Boil for about 8-10 minutes until the lobster is bright red and cooked through. Remove from water and let cool.

    Prepare the Oysters

    Carefully shuck the East and West Coast oysters. Place them on a platter with crushed ice to keep them fresh.

    Prepare the Shrimp

    If not already cooked, bring a pot of water to a boil. Add the jumbo shrimp and cook for 2-3 minutes until they turn pink. Remove and cool. Peel and devein the shrimp.

    Prepare the Tartares

    In a bowl, combine the diced salmon with seasonings (salt, pepper, and a squeeze of lemon) for the salmon tartare. For the bluefin tuna tartare, season similarly. Keep both tartares chilled until serving.

Assembly

    Create the Seafood Tower

    On a large plate or seafood tower stand, arrange the oysters around the base. In the center, place the lobster, split in half for presentation. Arrange the shrimp around the lobster and add small bowls of salmon tartare and bluefin tuna tartare on the side. Garnish with lemon wedges and fresh herbs.

    Serve with Accompaniments

    Serve the seafood tower with cocktail sauce and mignonette sauce for dipping. Enjoy fresh and chilled.
