    Prepare the Beef

    Preheat your oven to 375°F (190°C). Pat the beef roast dry with paper towels. This helps to get a nice crust.

    Make the Herb Paste

    In a small bowl, combine the chopped fresh rosemary, minced garlic cloves, olive oil, salt, and black pepper. Mix well to form a paste.

    Season the Meat

    Rub the herb paste all over the beef roast, ensuring it is evenly coated. Let it sit at room temperature for about 30 minutes.

    Prepare the Vegetables (Optional)

    If using, place the carrots, potatoes, and onions in the bottom of a roasting pan. Drizzle with a bit of olive oil and sprinkle with salt and pepper.

    Roast the Beef

    Place the seasoned beef roast on top of the vegetables in the roasting pan (if using). Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Once the roast is done, remove it from the oven and cover it loosely with aluminum foil. Let it rest for at least 15-20 minutes before slicing.
