    Prepare the Ingredients

    Shuck the sweet corn, removing all silk and husk. Cut the kernels off the cob and set aside. Dice the onion and chop the cilantro finely. Remove the casing from the chorizo and crumble it.

Cooking

    Caramelize the Onions

    In a large skillet over medium heat, add a tablespoon of oil. Add the diced onion and cook for about 10-15 minutes until they are soft and golden brown. Stir occasionally to prevent burning.

    Cook the Chorizo

    Add the crumbled chorizo to the skillet with the caramelized onions. Cook for about 5-7 minutes or until the chorizo is browned and cooked through.

    Roast the Sweet Corn

    In a separate skillet, heat a tablespoon of oil over medium-high heat. Add the sweet corn kernels and sprinkle with salt and black pepper. Roast for about 7-10 minutes, stirring occasionally until they are slightly charred.

    Make the Spicy Aioli

    In a small bowl, mix together the mayonnaise, sriracha sauce, and lemon juice. Adjust the spiciness by adding more sriracha if desired.

    In a large serving dish, combine the roasted sweet corn, caramelized onions, and chorizo. Crumble feta cheese over the top and garnish with chopped cilantro. Drizzle with the spicy aioli before serving.
