Cooking Instructions

  1. 1

    Prepare the Broth

In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.

  2. 2

    Sauté Vegetables

In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes.

  3. 3

    Add Peppers

Stir in the diced red and yellow bell peppers. Sauté for another 2-3 minutes until they soften slightly.

  4. 4

    Toast the Rice

Add the Arborio rice to the skillet, stirring to coat the grains in the oil and mix with the vegetables. Toast the rice for about 2 minutes until it becomes slightly translucent.

  5. 5

    Add Broth Gradually

Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15 minutes.

  6. 6

    Incorporate Asparagus

After 15 minutes, add the asparagus pieces to the rice mixture. Continue adding broth and stirring for another 5-7 minutes, or until the rice is creamy and al dente.

  7. 7

    Finish with Cheese

Once the rice is cooked, remove the skillet from heat. Stir in the grated Fontina cheese until melted and creamy. Season with salt and black pepper to taste.

  8. 8

    Serve

Serve the risotto hot, garnished with additional cheese or freshly cracked pepper if desired.
