Prepare the Prime Strip Steak

    Season the Steak

    Pat the prime strip steaks dry with paper towels. Rub each steak with olive oil, and season generously with salt and black pepper on both sides.

    Cook the Steak

    Heat a skillet or grill over high heat. Once hot, place the steaks in the pan and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let them rest for 5 minutes.

Make the Skinny French Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create skinny fries.

    Season the Fries

    In a large bowl, toss the cut potatoes with olive oil, salt, and paprika until evenly coated.

    Bake the Fries

    Preheat the oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Prepare the Au Poivre Sauce

    Sauté Shallots

    In the same skillet used for the steak, melt the butter over medium heat. Add the minced shallots and sauté for about 2 minutes until translucent.

    Deglaze the Pan

    Carefully add the brandy or cognac to the skillet, scraping up any browned bits from the bottom. Allow it to simmer for a minute to reduce.

    Make the Sauce

    Stir in the heavy cream and crushed black peppercorns. Let the sauce simmer for 3-4 minutes until it thickens slightly. Season with salt to taste.
