1. Prepare the Potatoes

Peel and cut the potatoes into even chunks, about 1-2 inches in size, to ensure they cook uniformly.

2. Boil the Potatoes

Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

3. Prepare the Garlic (optional)

If using garlic, peel the cloves and add them to the pot during the last 5 minutes of boiling to infuse the flavor into the potatoes.

Mashing and Mixing

4. Drain the Potatoes

Once the potatoes are tender, drain them well in a colander. Allow them to sit for a minute to release excess steam.

5. Mash the Potatoes

Return the drained potatoes (and garlic if used) to the pot. Use a potato masher or ricer to mash the potatoes until smooth and creamy.

6. Incorporate Butter and Cream

Add the unsalted butter and heavy cream to the mashed potatoes. Stir until the butter is melted and everything is well combined.

7. Season to Taste

Add salt and black pepper to the potato puree. Taste and adjust seasoning as needed.

Transfer the potato puree to a serving dish. If desired, sprinkle with chopped chives for garnish and serve warm.
